Lemon Ice Box Pie
1 (9 inch) prepared graham cracker crust
2 (14oz.) cans sweetened condensed milk
4 egg yolks
1/2 cup lemon juice (not bottled juice)
Zest from 1 lemon
3 egg whites
5 teaspoons white sugar
- Preheat oven to 350 degrees.
- In a medium mixing bowl, beat together condensed milk, egg yolks, lemon juice and lemon zest. Pour mixture in graham cracker crust.
- In a separate mixing bowl, beat egg whites with sugar until stiff peaks form.
- Spread evenly on top of lemon filling.
- Brown in preheated oven for approximately 15 minutes.
